Who can resist light and crunchy batter-friend vegetables? For the perfect coating, combine two parts all-purpose flour with one part rice flour or cornstarch. Add salt, seasonings (curry, cumin, paprika), and a dash of cold soda water just before frying.

After removing fitters from the fryer, cool them in layers of paper towels. This simple trick – which also works well on French fries – helps lighten things up by allowing the excess oil to drain off.
