Boursin Chorizo Vegetable Pie

with Boursin Garlic & Herbs

For The Vegetable Pie
  • Add your Boursin cheese to the middle of a baking dish and surround with chopped leeks, sundried tomatoes, peas, squash, chorizo, basil, seasoning and vegetable stock. Cover with a lid or tin foil and bake in a preheated oven at 180c for 45 minutes.
  • Remove the dish from the oven and with a spoon mix all the ingredients well. Add your cream and mix again.
  • Roll out the puff pastry and cut into squares, arrange on top of your pie on a circular motion so the dish is completely covered in pastry. Brush with some beaten egg so it turns golden when you bake.
  • Bake the pie at 180c for 20 minutes, or until the pastry turns golden and crispy. Remove from the oven and enjoy while hot!

  • 150 g Boursin Garlic & Herbs

  • 2 leeks

  • 120g peas

  • 8 sundried tomatoes

  • 220g butternut squash

  • 8 chorizo sausages (or a veggie alternative—we used Plant Pioneers)

  • 100g-150g vegetable stock

  • A handful of chopped basil

  • 250g single cream
