Cook The Pasta
  • Boil the macaroni in salted water until al dente.
  • Drain and set aside.
Infuse The Milk
  • Place the milk, thyme and bay leaves in a pan over low-medium heat.
  • Warm gently for 10 minutes to infuse, then strain to remove herbs.
Make The Roux
  • In a separate pan, melt the butter and add the chopped garlic. Cook for 2–3 minutes, then stir in the flour.
  • Cook for a further 2 minutes, stirring constantly.
  • Add infused milk. Gradually whisk the warm infused milk into the roux over 5 minutes until smooth. Bring to a gentle simmer.
Enrich The Sauce
  • Remove from the heat and stir in salt, pepper, Dijon mustard, Boursin, truffle paste.
  • Mix until creamy and smooth.
  • Combine Add the cooked pasta to the sauce and mix well ensuring fully incorporated.
  • Mix in extra Boursin.
Serve
  • Serve in desired amount, with a healthy layer of toasted panko bread crumbs and a good sprinkle of fresh chives.

  • 250g macaroni pasta

  • 600ml milk

  • 8 Sprigs of Thyme

  • 2 bay leaves 50g butter

  • 4 garlic cloves, finely chopped

  • 50g plain flour

  • 15g Dijon mustard

  • 100 g Boursin Blue Cheese Flavour (plus 50g reserve)

  • 10g truffle paste (about 2 tsp, adjust to taste)

  • 1 pinch of salt

  • 1 tsp black pepper

  • Toasted Panko bread crumbs

  • Healthy bunch of finely chopped fresh chives to finish
