For The Truffle Mac & Cheese
  • Boil the cauliflower in a large pan of water for 3-5minutes until almost tender but still firm. Drain and set aside.
  • Cook the macaroni according to the packet instructions until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over a medium heat. Stir in the flour making a paste and cook for 2-3 minutes to ensure the flour is cooked through.
  • Gradually pour in the milk, a little at a time, whisking continuously to avoid any lumps. Cook for 10-15 minutes until the sauce has thickened.
  • Add in 100g of the Boursin Truffle to the sauce and stir until smooth, season to taste.
  • To assemble, in a casserole dish layer the cauliflower florets, leaves and macaroni and top with the cheese sauce stirring to coat evenly.
  • Sprinkle over the panko breadcrumbs, chopped thyme and then crumble the remaining Boursin over the top.
  • Bake in the oven for 25-30 minutes until the top is golden brown and bubbling.
  • Serve immediately with a green salad or vegetable of your choice.

  • 225g macaroni pasta

  • 1 small cauliflower, cut into florets and the leaves shredded

  • 30g butter

  • 30g plain flour

  • 480ml milk

  • 150g Boursin Truffle Flavoured

  • 50g panko breadcrumbs

  • Handful of fresh thyme leaves, chopped

  • Salt & Pepper, to taste
