For Beets, Berry & Pecan Salad
  • Combine spring greens, beets, blueberries, hazelnuts and herbs in a large serving bowl.
  • In a small blender or chopper, combine balsamic vinegar, mustard, honey and 1 Tbsp. Boursin crumbles.
  • Pulse until smooth, then drizzle in olive oil until emulsified.
  • Add vinaigrette and 1/4 cup Boursin Crumbles to the salad and gently toss.
  • Salt and pepper to taste. Enjoy!

  • 4 cups spring greens

  • 2 roasted beets, halved and sliced

  • 1/2 cup blueberries

  • 1/2 cup toasted hazelnuts

  • 2 Tbsp. basil leaves, roughly chopped

  • 2 Tbsp. mint leaves, roughly chopped

  • 2 Tbsp. flat leaf parsley, roughly chopped

  • 1/4 cup Boursin Garlic & Herbs Crumbles

  • For Balsamic Vinaigrette dressing:

  • 2 Tbsp. balsamic vinegar

  • 1/4 tsp. Dijon mustard

  • 1/4 tsp. honey

  • 1 Tbsp. Boursin Crumbles

  • 1/4 cup olive oil

  • Salt and pepper to taste
