Dice the beetroot to 2 mm cubes.
In a dry pan over high heat, toast the pine nuts.
Evenly spread the beetroot cubes on the shortbread biscuits.
Place the equivalent of a teaspoon of Boursin® Garlic & Fine Herbs Cheese on top.
Sprinkle the toasted pine nuts on top, and decorate with a small basil leaf.
