  • Dice the beetroot to 2 mm cubes.
  • In a dry pan over high heat, toast the pine nuts.
  • Evenly spread the beetroot cubes on the shortbread biscuits.

  • Sprinkle the toasted pine nuts on top, and decorate with a small basil leaf.
