Eggs with Boursin in Tomato and Courgette Cases

Tomatoes and Courgettes
  • Heat oven to 190°C
  • Cut off and reserve 1.5cm top of each tomato and courgette
  • Scoop out the seeds with a teaspoon and discard
  • Salt and pepper inside of hollowed-out vegetables
  • Place tomatoes and courgettes upside down on lined baking sheet
  • Cook for 15 minutes
Cheese Mixture
  • Combine the Boursin Cheese and crème fraîche with a few cracks of pepper
  • Mix thoroughly
  • Grease baking dish with butter
  • Remove tomatoes and courgettes from oven and let cool slightly
  • Place them right side up in prepared baking dish
  • Fill each halfway with cheese mixture
  • Break one egg over each
  • Spread remaining cheese mixture over eggs
Finish and Serve
  • Place tops on tomatoes and courgettes
  • Bake for 15 minutes
  • Serve immediately
