Twice-baked Potatoes

with Boursin Garlic & Herbs Cheese

Baking potatoes once just isn’t enough when you’re adding Boursin Garlic & Herbs Cheese to them. The garlic and herbs add a burst of flavour, while the creamy cheese brings the potatoes to a velvety, delightful texture.

Bake
  • Heat oven to 200°C
  • Pierce potatoes with fork in several places
  • Place potatoes on baking sheet and bake until soft, about 1 hour
  • Remove potatoes from oven and allow to cool slightly
  • Cut off the top third of each potato and gently scoop out cooked potato into a medium bowl, leaving about 1-1.5cm shell intact
  • Discard tops of potato and put potato shells back onto baking sheets
Mash
  • Mash cooked potato until crumbly
  • Stir in Boursin Cheese and a pinch each of salt and pepper
  • Taste and season accordingly
Combine and Serve
  • Spoon potato mixture into potato shells
  • Bake for 15 minutes or until heated through
  • Garnish with toppings, if desired

Tip

In a rush? Cook your potatoes in the microwave instead. Simply, place potatoes on paper towel-lined plate and microwave on high for 15 minutes, or until soft. Follow the remaining steps, except when reheating potatoes, put them in the microwave on high for 3 minutes, or until heated through.
